Pumpkin risotto with bacon and leeks

While it’s sad to say goodbye to the sunshine of summer, one of the perks of autumn’s cold snap is that we can start enjoy warming meals again. Along with butternut squash, pumpkin is becoming an increasingly popular addition to curries. In this particular recipe the velvety textures of pumpkin, coconut milk and peanut butter are brought to life with lime zest, fresh ginger and chilli.
